Spaghetti squash boats with black beans and enchilada sauce

This is a full meal within itself. It is plant-based and super flavourful. In this class, we will learn how to cut squash, roast it, fill it and then make a quick enchilada sauce that you are going to end up being addicted to. It is so delicious! This dish has cheese melted on it, but it is easy made vegan if desired!
